    Place 2 cups of chopped cherries with 3 tablespoons of sugar and a pinch of salt in a saucepan over medium heat. Cook the mixture for about 5 minutes until the cherries start to cook down. Let the sauce cool completely.

    Whip 2 cups of liquid heavy cream until it doubles in size and becomes thick. Add 1 cup of sweetened condensed milk to the whipped cream. Add the cooled cherry sauce to the mixture and gently fold it in to preserve the air in the whipped cream.

    Pour the mixture into a suitable mold. Add a layer of biscuits on top as a final layer.

    Place the mold in the freezer for at least 5 hours until the ice cream sets.
