نضع اللحم في طنجرة على النار مع زيت الزيتون، وعندما يأخذ لونًا جميلًا نضيف البصل المفروم والكرفس والثوم ونقلب جيدًا.

We put a quarter bunch of parsley, an onion, and four cloves of minced garlic in a bowl.

نضع ربع ضمة بقدونس وبصلة وأربعة فصوص ثوم مفرومين في وعاء.

We add tomato paste, paprika, turmeric, cumin, coriander, salt, olive oil, and lemon juice.

نضيف معجون الطماطم، البابريكا، الكركم، الكمون، الكزبرة، الملح، زيت الزيتون، وعصير الليمون.

We stir the ingredients well, then add the sardines and mix them thoroughly with the spices.

I made this easy and simple chicken tajine to highlight one of the most popular Moroccan dishes around the world.

We start by seasoning the chicken pieces with the Moroccan spice blend, where we mix all the listed spices and use 1 tablespoon of the blend to season the chicken, then let it absorb the flavor.

نبدأ بتتبيل قطع الدجاج باستخدام خليط التوابل المغربية حيث نخلط جميع التوابل المذكورة ونضع ١ملعقة كبيرة من التوابل على الدجاج ونتركه ليكتسب النكهه).

In a tagine or deep pot, add the chopped onion and sauté it in a little oil until it softens.

في طاجن أو وعاء عميق، نضيف البصل المفروم ونقليه في قليل من الزيت حتى يذبل.

Add the minced garlic and sauté until golden.

Add the chicken pieces to the tagine and stir them with the onion and garlic until lightly browned

نضيف قطع الدجاج إلى الطاجن ونقلبها مع البصل والثوم حتى يتحمر قليلًا.

We add the chickpeas, chopped dried apricots soaked in hot water for 20 minutes, preserved lemon peel, chopped tomatoes, and chicken stock.

نضيف الحمص والمشمش المجفف المفروم المنقوع في ماء ساخن لمدة ٢٠ دقيقة  وقشر الليمون المحفوظ والطماطم المفرومة ومرق الدجاج.

We add the saffron threads soaked in a little warm water, olives, and chopped parsley.

نضيف خيوط الزعفران المنقوعة في قليل من الماء الدافئ والزيتون والبقدونس المفروم.

Cover the tagine and let it cook on low heat for 1.5 to 2 hours until the chicken is tender and fully flavored.

نغطي الطاجن ونتركه على نار هادئة لمدة 1.5 إلى 2 ساعة حتى ينضج الدجاج ويمتص النكهات.

نتبل بالملح والفلفل حسب الذوق.

Mix the marinade ingredients and put it on the chicken for two hours or overnight.

اخلطي مكونات التتبيلة وضعيها على الدجاج لمدة ساعتين او ليلة كاملة.

For the couscous: Rub couscous with olive oil, then add hot water with vegetable stock. Cover and let it .

لتحضير الكسكس: افركي الكسكس بزيت الزيتون وأضيفي خليط الماء ومرق الخضار. غطيه واتركيه .

Arrange chicken, zucchini, carrots, and olives in a baking dish. Add bay leaves and cloves.

في صينية فرن، صفي الدجاج مع الكوسا والجزر والزيتون. اضيفي ورق الغار و القرنفل.

نقوم بغسل الدجاجة الكاملة جيدًا.

Prepare the marinade by mixing olive oil, minced garlic, chopped cilantro, saffron infusion, Moroccan chicken tagine paste, and all the spices

نقوم بتحضير التتبيلة بخلط زيت الزيتون، الثوم المهروس، الكزبرة المفرومة، منقوع الزعفران، معجون طاجين الدجاج المغربي، وجميع البهارات.

Coat the chicken well with the marinade and let it rest for at least 2 hours or overnight for better flavor.

نقوم بتتبيل الدجاجة جيدًا بالخليط، ثم نتركها لمدة ساعتين على الأقل أو ليلة كاملة للحصول على نكهة أفضل.

In a clay tagine pot, spread the chopped onions at the bottom.

نقوم بوضع البصل المفروم في قاع طاجن فخاري.

Place the marinated chicken over the onions, pouring in any remaining marinade.

نقوم بوضع الدجاج المتبل فوق البصل، ثم نضيف باقي التتبيلة.

Add the preserved Moroccan lemon to the pot.

نقوم بإضافة الليمون المغربي المخلل إلى الطاجن.

Cover and bake in a preheated oven at medium heat for about 1 hour until the chicken is fully cooked.

نقوم بتغطية الطاجن وإدخاله إلى الفرن المسخن مسبقًا على حرارة متوسطة لمدة ساعة حتى ينضج الدجاج تمامًا.

Add the Moroccan olives and broil the chicken until its skin turns golden brown.

نقوم بإضافة الزيتون المغربي إلى الطاجن، ثم نترك الدجاج تحت الشواية حتى يتحمر وجهه

Remove the tagine from the oven and garnish with fried potatoes.

نقوم بإخراج الطاجن من الفرن، ثم نزينه بالبطاطس المقلية.

نقوم بتسخين زيت الزيتون مع ملعقة من السمن في قدر، ثم نقوم بإضافة البصل المقطع ونقلبه حتى يذبل ويصبح شفافاً.

Add the minced garlic and chopped celery, and continue stirring until their aroma is released.

نقوم بإضافة الثوم المفروم والكرفس المفروم إلى القدر، ثم نقوم بتقليبهم حتى تفوح رائحتهما.

Add the chopped meat and stir continuously until its color changes from red to light brown, indicating it’s beginning to cook.

About 15 minutes before the end of cooking, add the boiled chickpeas, vermicelli, and 1 tablespoon of flour dissolved in a little water; gently stir to incorporate.

Allow the stew to simmer for an additional 15 minutes, then garnish with chopped coriander before serving.

نضع صحنين من الماء في قدر على النار.

Add 1 bowl of sugar and ½ bowl of rose water. Mix well.

نضيف صحن السكر ونصف صحن ماء الورد ونخلط جيدًا.

نضيف أعواد القرفة وبهارات النجمة.

نضيف الفواكه المجففة إلى المزيج.

Add the apple and pear and let the mixture

نضيف التفاح والإجاص ونترك الخليط يغلي حتى تنضج الفواكه.

Add the dried carob, then the honey and leave the mixture to boil again.

نضيف القراصية المجفف ثم العسل ونترك الخليط حتى يغلي مرة أخرى.

Transfer the mixture into a tagine dish and serve hot or warm.
